Difference between sauteing and stir-frying
Sauteing and stir-frying are similar cooking techniques, however, there are subtle differences between the two.
Stir-frying is a Chinese cooking technique in which food is cooked at high heat, while it is tossed or stirred in a wok. Traditionally, a wok is used to make a stir-fry, however, you can also use a frying pan. The tossing and stirring action facilitate even and fast cooking, with the high heat charring the vegetables in places.
Sauteing is similar to stir-frying, however, it usually involves using more oil (or fat such as butter or ghee), and medium heat versus high heat. This means that the process can take a little longer, but it results in a more even cook, and no charring.
