Warm mozzarella with lemon leaf and Kumato®

Chef Alex Prichard has taken a classic Italian snack, and put his own twist on it by pairing mozzarella cheese with sliced Kumato® tomatoes. Lemon leaves are added for a hint of freshness and citrus tang. Ready in less than 15 minutes, this snack is perfect for entertaining - be it a casual barbeque with friends, or a formal dinner party.

In this recipe, chef Alex Prichard has taken the classic Italian Pomodoro sauce to the next level by adding in our favourite Kumato® tomatoes. He's used these versatile tomatoes in two different preparations. First he's dried them (the recipe includes instructions for drying in the oven and the sun) to add pops of flavour throughout the rich buttery sauce, and then he's added fresh sliced Kumato® tomatoes in the end for an added burst of freshness.

Italian-inspired avocado toast with fermented chilli and fresh ricotta
