Broccolini® - Supporting the Stephanie Alexander Kitchen Garden Foundation for the Second Year!

We're thrilled to announce that Broccolini® is partnering with Coles & the Stephanie Alexander Kitchen Garden Foundation for the second year running! From 5th April to 2nd May 2023, 40¢ from the purchase of each Coles Australian Broccolini® Family Pack will be donated to the Stephanie Alexander Kitchen Garden Foundation, up to a maximum of $100,000.

Derek grows Broccolini® for Perfection on his picturesque farm in Tasmania.

Broccolini® thrives in the milder Summers and longer daylight hours in Tasmania taking anywhere from 65 to 80 days from planting seedlings to harvest, depending on the temperature. 

As a grower of many other vegetables, Derek finds that Broccolini® is an excellent vegetable to grow as part of his crop rotation, it grows really well and is good for the soil. 

One of Derek's favourite ways to eat Broccolini® is simply blanched with a nice steak!

Serves: 4    Prep: 10 mins    Cooking: 20 mins

This recipe is provided by Stephanie Alexander as part of Coles’ community partnership, and as Founder of the Stephanie Alexander Kitchen Garden Foundation.

  • 1 bunch Coles Australian Broccolini® Family Pack, coarsely chopped
  • 400g rigatoni or penne
  • 1/4 cup (60ml) extra virgin olive oil
  • 1/2 cup (35g) fresh sourdough breadcrumbs (made from day-old bread)
  • 6 anchovy fillets, finely chopped
  • 1 garlic clove, finely chopped
  • 12 pitted green or black olives, thinly sliced

  1. Cook the broccolini in a large saucepan of boiling water for 4 mins or until bright green and tender-crisp. Use a slotted spoon to transfer the broccolini to a bowl of iced water.
  2. Add pasta to the pan of boiling water and cook following packet directions or until al dente. Drain well, reserving ¼ cup (60ml) of the cooking liquid.
  3. Meanwhile, heat 2 tbs oil in a large frying pan over medium-high heat. Add the breadcrumbs and cook, stirring, for 4-5 mins or until golden brown and crisp. Transfer to a plate. Heat remaining oil in the pan. Add anchovy and garlic. Cook, stirring, for 1 min or until aromatic.
  4. Add the pasta, broccolini, olive and reserved cooking liquid to the pan. Season and toss to combine.
  5. Divide pasta mixture among serving bowls. Sprinkle with breadcrumbs and season with pepper to serve.
