BARBECUE CALYPSO® MANGOES WITH MOJITO SYRUP RECIPE

Calypso® Mango Mojito Syrup

STEP 1 To make the Calypso® mango mojito syrup, chop the mango flesh and place into a blender or food processor. Blend until smooth. Pour into a small saucepan, add the sugar, water, lime rind and juice and mint. Bring to the boil, stirring until the sugar has dissolved. Reduce heat to medium, simmer for 5 minutes. Strain into a heatproof jug. Stir in the rum and bitters, if using, Refrigerate until cold.

STEP 2 Preheat a barbecue plate or chargrill over high heat (see tip).

STEP 3 Cut the mango cheeks from the stones. Lightly spray the cheeks with oil, sprinkle with coconut sugar. Barbecue the mango cheeks, in batches, cut side down, for 4 minutes or until lightly charred. Remove to a tray and set aside to cool to room temperature.

STEP 4 To serve, top the mango cheeks with yoghurt, drizzle with mango mojito syrup, sprinkle with coconut flakes, and mint.
CHIPOTLE SALMON AND CALYPSO® MANGO TACOS RECIPE

STEP 1 Remove the chillies from the adobe sauce, spoon the sauce into a bowl. Chop the chillies, add to the sauce with the maple syrup, garlic and 2 tablespoons of the oil. Mix well.

STEP 2 Cut the salmon into 1-11/2cm thick pieces. Place the salmon onto a plate. Spoon over half the chipotle mixture, turn to coat both sides of the salmon. Heat the remaining oil in a large non-stick frying pan over high heat. Cook the salmon, in batches so the pan stays hot, for 2 minutes until golden, turn and allow the salmon to kiss the pan then remove to a large clean plate. Cover and set aside to rest 3 minutes.

STEP 3 Cut the cheeks from the mangoes. Using a large spoon remove the mango fruit from the cheeks and cut into thin slices. Swirl the yoghurt and remaining chipotle mixture together.

STEP 4 Pan fry the tortillas in a hot pan until lightly toasted.

STEP 5 Top the tortillas with cabbage, salmon, pickled red onion, mango and coriander. Drizzle with the chipotle yoghurt and serve.
