125g Qukes® baby cucumbers
2 small carrots, cut into sticks
Perfection Fresh strawberries, Blueberries and AUTUMNCRISP® Grapes
2 hard-boiled eggs, halved
Soy sauce, Kewpie mayonnaise, to serve

Qukes and avocado nori rolls

1¼ cups (250g) sushi rice rinsed well
1¼ cups water
1½ tbs (30ml) sushi seasoning
125g Qukes® baby cucumbers
4 nori sheets
Kewpie mayonnaise
1 avocado, sliced sideways

Method

Place sushi rice and water in a large saucepan. Cover with lid and bring to boil over high heat. Boil for 2 minutes. Reduce heat to low and cook for a further 10 minutes, or until the water is absorbed. Remove from the heat and stand, covered for 15 minutes.
Spread the rice onto a large tray and drizzle with sushi seasoning. Stir to combine. Set aside, stirring occasionally, to cool at room temperature. Meanwhile, cut 4 Qukes® baby cucumbers into quarters lengthways.
Place 1 sheet of nori, rough side up, on a damp bamboo sushi mat, with one short side closest to you. Using wet fingers, press 3/4 cup of sushi rice over nori, leaving a 1cm border at the opposite short end.
Drizzle the short end closest to you, with mayonnaise. Top with avocado and 4 pieces of Qukes® baby cucumbers. Use a bamboo mat to tightly roll up, enclosing the filling. Remove the mat. Repeat with remaining nori, rice, mayonnaise, avocado and Qukes®.
Slice the nori rolls into pieces and place in lunch box with the remaining Qukes®, carrots, fruit, egg, soy and mayonnaise and serve.

TipNori rolls can be made 1 day ahead. Wrap in baking paper and foil and store, unsliced in the fridge.

TipSushi rice, nori sheets, and sushi seasoning is easily available at Asian grocery stores or in the Asian food aisle of regular supermarkets. If sushi seasoning isn’t available, substitute with vinegar.
