Moroccan spiced roasted Broccolini

Method

For the roast lamb:

  1. STEP 1Preheat the oven to 200°C fan forced.
  2. STEP 2Combine the oil, lemon, garlic and paprika on a plate. Add the lamb. Turn to coat both sides. Season with freshly ground black pepper.
  3. STEP 3Preheat a large non-stick frying pan on medium high heat. Cook the lamb, skin side down for 2-3 minutes until golden. Turn and cook for 1 minute. Transfer the lamb to a roasting pan. Place in the oven, roast for 20 minutes, for medium, or until cooked to your liking. Remove from the oven. Cover loosely with foil, stand for 15 minutes.

For the oven roasted Broccolini®:

  1. STEP 4Increase the oven to 220°C fan forced.
  2. STEP 5Place the Broccolini® in a single layer in a lightly greased roasting pan.
  3. STEP 6Spoon over the oil. Sprinkle over the spice blend. Season with pepper. Toss gently to coat.
  4. STEP 7Roast for 12 minutes (while the lamb is standing) or until the flowers are golden and crisp and the stems tender. 
  5. STEP 8Slice the lamb, serve with roasted Broccolini®, tzatziki, lemon wedges and pan juices.
Tips TipIf you like a little heat, add ½ teaspoon dried chilli flakes to the Moroccan spice blend.
