Method

 

  1. STEP 1 Cut about 1/3 of the grapes in half, leaving the rest whole. Combine all the grapes and chilli jam in a bowl. Stir to coat. Set aside. Place the vermicelli in a medium heatproof bowl, cover with boiling water. Stand for 2 minutes until just tender, drain.

 

  1. STEP 2 Heat a wok over high heat until hot. Add 2 teaspoon of the oil. Add half the chicken, stir-fry for 4-5 minutes or until browned. Remove to a clean bowl, repeat with oil and remaining chicken.

 

  1. STEP 3 Add the remaining oil to the hot wok. Add the grapes and chilli jam mixture, stir fry for 1 minute until the grapes soften slightly. Return all the chicken, including any juices to the wok, stir fry for 1 minute. Remove from the heat.

 

  1. STEP 4 Divide the noodles, lettuce, carrot, Quke® baby cucumbers and radish between 4 bowls. Spoon over the chicken and grape stir fry. Sprinkle with herbs and peanuts. Squeeze over the limes. Serve.
