Middle Eastern inspired  Monterosa® tomatoes Snack

This quick bite is inspired by Middle-Eastern flavours – rich and creamy labneh, with herbaceous Za’atar, and refreshing mint. Serve with your favourite brand of flat bread chips.

Ingredients:

Monterosa® tomatoes

Labneh

Za’atar

Extra Virgin Olive Oil

Mint Leaves

Flat bread chips, to serve

 Method:

Spoon a generous serving of labneh over the base of a serving platter. Sprinkle with Za'atar, a middle eastern spice blend. Then top with sliced Monterosa® tomatoes. Season with salt and freshly ground black pepper. Drizzle with extra virgin olive oil, and scatter mint leaves on top. Serve with toasted flat bread chips.

Greek Inspired Monterosa® tomatoes SNACK

This quick bite is inspired by the flavours of the Greek islands. Haloumi is pan-fried until golden, and then topped with Monterosa® tomatoes and Qukes® baby cucumbers. Finished off with extra virgin olive oil, and dried oregano. Serve with freshly baked crusty baguette.

Ingredients

Haloumi

Monterosa® Tomatoes, sliced

Qukes baby cucumbers, sliced

Extra Virgin Olive Oil

Oregano

Salt

Black Pepper, freshly ground

Crusty Baguette, to serve

Method

Pan fry sliced haloumi in olive oil until golden. Keep warm in the oven until ready to serve.

Arrange the warm haloumi on a serving board or platter.

Top with sliced Monterosa®® tomatoes and thinly sliced Qukes® baby cucumbers.

Drizzle with extra virgin olive oil. Squeeze a lemon on top and sprinkle with dried oregano. Season with salt and freshly ground black pepper. Serve with crusty baguette.

Greek Inspired Monterosa® tomatoes SNACK with Watermelon

Another Greek inspired quick bite, this one features fresh watermelon wedges topped with Monterosa® tomatoes, salty feta cheese, and mint leaves. It’s a salty sweet take on the watermelon, feta and mint salad.

Ingredients

Watermelon, cut into wedges

Monterosa® tomatoes, sliced

Salt

Black pepper, freshly ground

Greek feta cheese

Mint leaves

Extra Virgin Olive Oil

Lemon

Method

Cut watermelon into wedges and place on a chilled serving plate.

Top with sliced Monterosa® tomatoes. Season with salt and freshly ground black pepper.

Crumble over Greek feta and scatter with fresh mint leaves.

Drizzle with extra virgin olive oil and a squeeze of lemon. Serve.

Lebanese Inspired Monterosa® tomatoes SNACK

This Lebanese inspired quick bite starts with crispbread. Spread it with rich and creamy hummus. Or whatever your favourite dip of choice is – we love a beetroot hummus too. Top with Monterosa® tomatoes, chili salt and basil.

Ingredients

Hummus (or dip of choice)

Monterosa® tomatoes

Salt

Black pepper, freshly ground

Chilli Salt

Basil

Method

Spread crispbread with your favorite dip (we used hummus).

Top with sliced Monterosa® tomatoes. Season with freshly ground black pepper.

Sprinkle with chilli salt and fresh basil. Serve.
